Delicious sweet corn pie perfect for enjoying after dinner or for eating after lunch accompanied by a nice cup of coffee. Be sure to make it and treat everyone at home.
In the blender, add 1 ¼ cups of cream, condensed milk, eggs, sugar, corn, and vanilla. Blend for 1 minute on medium speed. Stop the blender, add the lemon zest, and blend for an additional 15 seconds.
Let the mixture rest in the blender for a few minutes until the foam reduces and the liquid settles. Pour the mixture into the mold, leaving ¼ inch from the edge. (There will be some cream mixture leftover) place the pie in a baking tray.
Carefully place the tray in the oven and bake for 1 hour 15 minutes or until a toothpick inserted in the center of the pie comes out clean.
Turn off the oven. Leave it in the oven for 15 more minutes to allow the pie to set (removing it from the oven immediately could cause it to collapse) Remove the pie from the oven. Let it cool to room temperature on a rack. Slice the pie into 8 portions. Serve with the reserved cream.
