Piloncillo Patties

  • 2 piloncillos
  • 1 cinnamon stick
  • 1 teaspoon anise
  • 1/2 cups water
  • 4 cups corn masa flour
  • 1 teaspoon baking powder
  • 2 cups vegetable oil, for frying

  • In a small pot over medium heat, heat the piloncillo with cinnamon, anise, and water until it becomes syrup. Let it cool completely and set aside.
  • In a bowl, add the dough, baking powder, and the necessary amount of piloncillo syrup, knead until incorporated and set aside. The dough should be moist.
  • Using your hands, shape into thick patties and set aside.
  • Heat the oil over medium heat, fry for 6 minutes or until the patties are golden brown and slightly fluffy.
