We prepare the pineapple mousse with pineapple pulp, coconut cream, whipping cream, and previously hydrated gelatin sheets.
For the avocado surprise: we add to the avocado pulp, the whipping cream, sugar, milk, stabilizer, and powdered glucose. In a silicone mold, we incorporate the pineapple mousse and then add the avocado. We top it off with more pineapple mousse.
Let it rest in the freezer for 2 hours.
