Pink Bouquet Cupcakes

  • 2 San Juan® eggs
  • 1 1/3 cups wheat flour
  • 3/4 cups cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoons salt
  • 3 tablespoons butter, room temperature
  • 1/3 cups vegetable oil
  • 1 1/3 cups granulated sugar
  • 1 cup whole milk
  • 1 teaspoon vanilla essence
  • 2 packages cream cheese, at room temperature, for the frosting
  • 1 1/2 cups icing sugar
  • almond essence
  • food coloring, pink

  • Preheat the oven to 180°C.
  • Sift the flour, cocoa powder, baking powder, baking soda, and salt. Set aside.
  • In a mixer, add the butter, vegetable oil, and sugar and beat until combined. Add the San Juan® eggs one at a time, the vanilla extract, and beat for 2 more minutes.
  • Add the sifted ingredients until fully combined.
  • Pour into cupcake liners and bake for 20 minutes or until cooked. Let cool.
  • For the frosting, in a bowl cream the cheese with the powdered sugar and almond extract, add the pink food coloring.
  • Pour the frosting into a piping bag with a star tip.
  • Place a pot with a foam ball and insert toothpicks into the cupcakes, then insert into the foam ball and start decorating with the frosting to resemble flowers.
