  • 2 kilos sweet potato, cooked and peeled
  • 1 1/2 kilos sugar
  • 2 cups water
  • 1/2 teaspoons vanilla essence

  • Put the sugar and water over heat, and when it reaches the hard ball stage, add the sweet potato and vanilla, boiling until a paste forms.
  • Beat until cool. Shape the sweet potatoes and place them on a tray lined with wax paper, letting them rest for a day. Brush them with honey, let them dry completely, and wrap them in tissue or wax paper.
