Put the sugar and water over heat, and when it reaches the hard ball stage, add the sweet potato and vanilla, boiling until a paste forms. Beat until cool. Shape the sweet potatoes and place them on a tray lined with wax paper, letting them rest for a day. Brush them with honey, let them dry completely, and wrap them in tissue or wax paper.
