Grease and flour a 12-cup bundt pan or two 5-cup loaf pans.
Preheat the oven to 190 degrees Celsius.
Sift the flour with the baking powder, salt, and baking soda. Sift again with the cocoa powder. Add to the milk, vanilla, and dissolved coffee.
Cream the butter until light and fluffy. Add the sugar and beat for 5 minutes. Add the egg yolks one at a time, lower the mixer speed, and add the flours along with the milk in three parts, starting and ending with the flour.
Beat the egg whites until soft peaks form and add one third to the mixture. Fold in the rest. Pour the mixture into the prepared pan and bake for 1 hour if using a bundt pan and less if using smaller pans, until a toothpick comes out clean.
To glaze it, melt a package of semi-sweet chocolate (Turin) with ¼ stick of butter and 2 tablespoons of corn syrup.
