Light Carrot Cake

  • 1 cup canola oil
  • 1 cup wheat flour
  • 1 cup carrot, grated
  • 1/2 cups walnuts, chopped
  • 1 tablespoon vanilla essence
  • 1 tablespoon cinnamon
  • 1/4 tablespoons salt
  • 1 teaspoon baking powder
  • 3/4 cups brown sugar
  • 2 eggs

  • Preheat the oven to 180 degrees.
  • Beat the eggs until a homogeneous consistency is obtained.
  • Pour in the oil while continuing to beat slowly.
  • Once the eggs and oil are mixed, pour in the cup of flour and continue beating.
  • In the same way, add the sugar, cinnamon, salt, and baking powder.
  • Finally, after the last ingredients have dissolved, add the grated carrot and then the chopped walnuts.
  • Stir gently with a spatula until all the ingredients are completely incorporated.
  • In a previously greased mold, whether round, ring-shaped, or any shape you like, pour in the mixture.
  • Bake in the oven for 30 minutes or until a toothpick inserted and removed comes out clean.
