Coconut Cake

Delicious and fluffy coconut cake, sprinkled on top with shredded coconut.

  • 250 grams flour
  • 1/2 cups sugar
  • 100 milliliters vegetable oil
  • 50 grams grated sweet coconuts
  • 1 teaspoon baking powder
  • 2 eggs
  • 1 teaspoon vanilla essence

  • Preheat the oven to 180º C and grease a one-liter capacity loaf pan.
  • In a large bowl, mix the flour with the sugar, coconut, and baking powder. In another bowl, mix all the wet ingredients (the oil, eggs, and vanilla).
  • Incorporate the liquid ingredients into the flour mixture until you achieve a smooth batter, then pour the mixture into the previously greased and floured baking mold.
  • Bake for 1 hour, until the cake has risen and is completely golden.
  • Decorate the cake to your liking: with powdered sugar, pineapple jam, shredded coconut, or as you wish.
