Easy Corn Cake

Corn cake is a classic of Mexican cuisine, it is very easy to prepare and perfect to complement a meal or for an afternoon with friends having coffee. It can be eaten alone or topped with a little cajeta, red fruit sauce, or rompope.

  • 2 1/2 cups corn kernels, Approximately 3 ears of corn
  • 100 grams flour
  • 2 cans condensed milk
  • 40 grams butter
  • 5 grams baking powder
  • 4 eggs

  • Preheat the oven to 180°C, grease and flour a round cake pan approximately 22 cm in diameter.
  • Add the corn to the blender along with the other ingredients and process until you have a smooth paste.
  • Pour the mixture into the mold and bake for approximately 45 minutes or until a toothpick inserted comes out clean.
  • Cool before unmolding.
