Almond and Berry Cake

A delicious almond and fresh berry cake recipe. Enjoy it for breakfast or with a cup of tea.

  • 2 1/2 cups wheat flour
  • 1 cup Gloria® butter unsalted butter
  • 1 1/3 cups sugar
  • 1 teaspoon vanilla essence
  • 4 eggs
  • 1/4 cups water, hot
  • 2 tablespoons baking powder
  • 1 teaspoon almond extract
  • 1 cup blueberry
  • 1/2 cups blueberry
  • 1 teaspoon lime juice
  • 1 tablespoon sugar

  • Preheat the oven to 165 degrees C for a metal mold or 177 for a glass mold.
  • In a bowl, combine the butter, sugar, hot water, and almond extract; beat until the butter is soft; add the eggs and continue beating until the mixture is frothy.
  • Gradually add the flour mixed with baking powder and continue beating until the batter is uniform.
  • Gently fold in the sliced berries and almonds by hand. Pour into a greased mold.
  • For the jam, mash 1/2 cup of berries and mix with lemon juice and sugar. Cover the mixture with the jam.
  • Bake for 50 minutes. 5 minutes before it's done, insert a toothpick to check if it is cooked; if the toothpick comes out clean, it’s ready, if it comes out stained with batter, let it bake longer.
  • Immediately remove from the mold and let it cool before serving.
