Banana Pudding

This banana pudding recipe is perfect for breakfast or dinner. It is very easy to make and doesn't require many ingredients, plus it is dairy-free. It has a rich banana flavor, is flavored with orange, and also includes almonds which add great taste.

  • 6 shortbreads
  • 3 bananas
  • 3 eggs
  • 200 milliliters rice milk
  • 60 grams sugar
  • 1 tablespoon orange zest
  • 1/4 cups almonds, sliced

  • Preheat the oven to 180°C.
  • Beat the eggs with the sugar until the sugar has dissolved. Crumble the mantecadas and add them to the mixture. Mix gently to coat all the crumbs.
  • Slice the banana and incorporate it into the mixture, add the orange zest and some peeled and sliced almonds.
  • In a non-stick pan, place the sugar and a little orange juice. Leave over medium heat until a caramel forms, stirring with a wooden spoon to incorporate all the sugar. Once it takes on a light amber color, pour the caramel into a glass dish and immediately add the banana pudding mixture.
  • Bake at 180°C for 40 minutes. Remove from the oven and let cool for about 20 minutes, unmold the pudding and sprinkle with some powdered sugar and sliced almonds.
