Fluffy Lemon Pound Cake with Poppy Seeds

  • 1/2 cups FAGE® Total 0% greek style yogurt
  • 1/4 cups butter
  • 3/4 cups granulated sugar
  • 2 eggs
  • 1/2 cups vegetable oil
  • 1 tablespoon lime zest
  • 1 2/3 cups flour
  • 1 teaspoon baking powder
  • 2 teaspoons salt
  • 3 tablespoons poppy seed
  • 1/2 cups icing sugar
  • 1/4 cups lime juice

  • Preheat the oven to 180° C.
  • Cream the butter in the mixer and add the sugar. Add the eggs one by one, mixing well after each addition.
  • Scrape the sides of the bowl and gradually add the oil in a stream while continuing to mix for proper incorporation. Add the Yoghurt FAGE Total® 0% and the lemon zest.
  • In another bowl, combine the flour, baking powder, salt, and poppy seeds. Gradually integrate the dry ingredients into the mixer.
  • Grease a loaf pan and pour the mixture into the pan. Bake at 180°C for 60 minutes.
  • Combine the sifted powdered sugar with the lemon juice and beat until there are no lumps. Glaze the lemon pound cake once it is cool.
  • Slice and serve.
