Zucchini and Banana Cake

Delicious and traditional banana cake made in a healthier way.

  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 pinch salt
  • 1 cup sugar
  • 2 tablespoons cinnamon powder
  • 3 eggs
  • 2 bananas
  • 3/4 cups unsalted butter
  • 1 teaspoon vanilla essence
  • 1 zucchini
  • 2 1/2 cups flour

  • Preheat the oven to 180 degrees. Grease and flour a cake pan.
  • Mix flour, baking powder, baking soda, salt, sugar, and cinnamon in a large bowl.
  • Place the egg, bananas, butter, and vanilla in the blender. Blend until smooth.
  • Add the banana puree to the bowl with the flour. Add the grated zucchini. Using a spatula, gently mix everything until well combined.
  • Pour the mixture into the cake pan.
  • Bake for 45 to 60 minutes or until a toothpick inserted comes out clean.
