Honey Cake

Traditional recipe from Oma (my grandmother). Its scents and flavors remind me of the best moments.
Ingredients

Servings
  • 300 grams honey
  • 250 grams sugar
  • 500 grams flour
  • 3 eggs
  • 2 teaspoons baking powder
  • 1 pinch salt
  • 1 teaspoon cinnamon, ground
  • 1 tablespoon ground cloves
  • 1 teaspoon ground cardamom

Low
  • Preheat the oven to 180 degrees.
  • In a fireproof pot or bowl, heat the honey and sugar on the stove until they form a kind of caramel. Both ingredients must be well melted and combined. Turn off and let cool a bit.
  • Sift the baking powder along with the flour and salt in a separate bowl.
  • Beat the eggs with the milk using a whisk in another bowl.
  • Alternately incorporate flour and the egg mixture into the honey and sugar mixture until a uniform dough forms.
  • Add the spices and stir again until they are perfectly combined.
  • Grease a large cake mold (preferably silicone). A Teflon one works too. Lining it with parchment paper and greasing it also works.
  • Fill the mold about 3/4 full or less, as the batter will rise, and place it in the oven for approximately 1 hour.
