  • 1/2 cups vegetable shortening
  • 1 cup sugar
  • 5 egg whites
  • 3 cups flour
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1 cup cow's milk
  • 1 teaspoon vanilla essence
  • 1 cup vegetable shortening
  • 3/4 cups icing sugar
  • 1 kilo fondant
  • red food coloring
  • green food coloring

  • yellow food coloring

  • Preheat the oven to 180°C.
  • Beat the egg whites to stiff peaks or until they triple in volume, add half of the sugar, the cream of tartar, and the salt. Using a sieve, add the flour and the rest of the sugar, folding in gently.
  • Separate the batter into 4 bowls and color each one.
  • Place each color in piping bags. Set aside.
  • On a baking sheet lined with parchment paper, pour the cake mixture in lines, alternating the colors, to create a rainbow. Bake for 8 minutes and cool.
  • Using a cutter, cut shapes from the rainbow cake and set aside.
  • For the cake, beat the butter and shortening, add the sugar, gradually add the egg whites, then add the flour, salt, baking powder, vanilla, milk, and beat until completely combined.
  • Add some of the cake batter to a previously greased and floured mold. Place the rainbow cake shapes in a row.
  • Add more cake batter until completely filled; it is important that the shapes are completely covered. Bake for 45 minutes and let cool.
  • For the frosting, beat the shortening with the powdered sugar until combined.
  • With the help of a spatula, cover the entire cake with the frosting. Set aside.
  • Divide the fondant into 4 portions and color with pink, blue, green, and yellow.
  • Make long rolls of different colors, combine all the rolls, and roll again to mix the colors together.
  • Roll out the fondant to approximately 3mm thickness, cover the cake, and trim off the excess with a knife. Decorate with candles.
