Vegan Banana Bread

  • 1 cup corn masa flour
  • 4 tablespoons sugar
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1 cup wheat flour
  • 1/4 cups tofu, creamed
  • 4 tablespoons vegetable shortening
  • 4 ripe bananas
  • 1 cup soy milk
  • 1 cup raisins

  • Preheat the oven to 180°C.
  • In a bowl, mix the corn flour with sugar, salt, baking powder, wheat flour, add the tofu, vegetable shortening, and bananas, pour in the milk gradually until you achieve a completely smooth mixture, add the raisins.
  • Pour the mixture into a loaf pan and bake for 25 minutes.
  • Serve with a glass of almond milk.
