  • 1 1/8 cups milk, for the dough
  • 1/4 cups butter, for the dough
  • 1 tablespoon sugar, for the dough
  • 2/3 cups flour, for the dough
  • 2 eggs, for the dough
  • 1/4 cups butter, for the topping
  • 1/4 cups sugar, for the topping
  • 1/2 cups flour, for the topping
  • 1 1/2 cups pastry cream, for filling
  • 1/4 cups chocolate, melted, for decoration

  • Preheat the oven to 180 °C.For the dough: heat the milk, butter, and sugar in a pot over medium heat, but do not let it boil. Remove from heat, add the flour all at once, and mix vigorously with a spatula until integrated.
  • Place the dough in a mixer with a whisk attachment, add the eggs one by one, and beat at medium speed. Place the dough in a pastry bag with a plain tip and set aside.
  • For the topping: mix the butter, flour, and sugar in a bowl and integrate with your hands until obtaining a smooth and homogeneous dough.
  • Use a rolling pin to roll out the topping dough on cling film to prevent it from sticking to the table. Freeze for 25 minutes.
  • Use a 4 cm diameter cutter to form circles and set aside in the freezer.
  • Mark 4 cm circles on a baking sheet lined with parchment paper and place the topping on each profiterole. Bake for 25 minutes, let cool inside the oven for 5 minutes, and set aside.
  • Cut the profiterole in half, fill with pastry cream, and decorate with melted chocolate.
