Preheat the oven to 200°C.
In a medium saucepan, heat the water and add the butter, salt, and sugar. Cook until the butter melts.
Add the flour all at once and mix well. Cook over low heat for 5 minutes or until the dough is golden and pulls away from the sides of the pan.
Beat the dough in a mixer until cool and add the eggs one at a time, continuing to beat. The mixture should be semi-liquid.
Place the dough in a piping bag with a plain tip and shape the profiteroles on a baking sheet lined with parchment paper or a silicone mat. Bake for about 20 minutes or until golden. Let cool.
Cut the profiteroles in half and fill with whipped cream.
Cover the tops with melted chocolate and decorate with pistachios. Let dry and enjoy.
