Puff Pastry Ears

  • 1 2/3 cups flour
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1/2 cups water
  • 1 stick margarine, (200 g) diced, cold
  • 1 egg, for brushing
  • 1/4 cups sugar, reserve 2 tablespoons for the end
  • 1 tablespoon butter, melted, for brushing

  • Preheat the oven to 200° C.
  • Make a well with the flour and add salt, sugar, and water in the center. Mix to dissolve.
  • Add the margarine and mix trying not to break the margarine cubes.
  • Roll out the dough and make a double turn, let it rest for 15 minutes in the refrigerator.
  • Roll out the dough again and repeat the previous step until you have 4 double turns, resting for 15 minutes in the refrigerator between each turn.
  • Roll out again with a rolling pin and brush with egg, add a bit of sugar. Roll in two parts and cut the ears.
  • Place the ears on a greased baking sheet and press lightly. Brush the surface with butter and sprinkle with the remaining sugar.
  • Bake for 15 minutes or until golden brown. Let cool and serve.
