Puff Pastry Ears

Here we leave a recipe for the classic puff pastry ears of the Mexican bakery. They are crispy and sugary and you will surely be surprised at how easy they are to prepare. Have fun with your children and prepare them together.

  • 1 2/3 cups flour
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1/2 cups Water
  • 1 stick margarine, (200 g) in cubes, cold
  • 1 egg, to varnish
  • 1/4 cups sugar, Reserve 2 tablespoons for the end
  • 1 tablespoon butter, melted, to varnish


Preheat the oven to 200 ° C.
Make a source with the flour and add salt, sugar and water in the center. Mix to dissolve.
Add the margarine and mix trying not to undo the cubes of margarine.
Stretch the dough and make a double turn, rest 15 minutes in the refrigerator.
Spread the dough again and repeat the previous step until you have 4 double laps, resting 15 minutes in the refrigerator between turns.
Re-spread with the rolling pin and varnish with egg, add a little of the sugar. Roll in two parts and cut the ears.
Place the ears on a greased oven tray and press lightly. Varnish the surface with butter and sprinkle with the rest of the sugar.
Bake 15 minutes or until golden brown. Cool and offer.


Accompany with a small glass with milk or coffee.


Take care to make the turns of the puff pastry well, otherwise it will not have layers and will not inflate.

Hola buenas noches, me parece de una excesiva confianza llamar orejitas de hojaldre a estos dulcecitos, yo siempre les llamé palmeritas, para mi orejitas son las de mi novia, a veces para desayunar le corto un poco de cartílago, alguien me sabe decir por que no sabe igual cuando crece, es por la levadura, o tiene algo que ver el forlmol, gracias buenas noches bebés.
