Pumpkin Mousse

  • 1/2 cups artificial sweetener, granulated
  • 1 envelope unflavored powdered gelatin
  • 3/4 cups low-fat milk
  • 3 egg yolks, beaten
  • 400 grams zucchini
  • 1 teaspoon ground ginger
  • 1 teaspoon vanilla essence
  • 3 cookies, ginger

  • In a saucepan, mix the sugar and gelatin. Add the egg yolks and milk. Cook and stir over medium heat until the gelatin dissolves and the mixture starts to bubble.
  • Remove from heat. Stir in the pumpkin, ginger, and vanilla. Transfer the mixture to a large bowl. Let cool for about 20 minutes.
  • Pour the mixture into six small ceramic cups. Cover and refrigerate for 5 hours or until firm.
  • To serve, top each portion with half a ginger cookie.
