Preparation
In a saucepan mix the sugar and gelatin. Add the egg yolks and milk. Cook and stir over medium heat until the gelatin dissolves and the mixture begins to bubble.
Get out of the fire. Mix in the pumpkin, ginger, and vanilla. Transfer the mixture to a large bowl. Let cool for about 20 minutes.
Place the mixture in six small ceramic glasses. Cover and refrigerate for 5 hours or until firm.
To serve, top each serving with a half gingerbread cookie.
