Pumpkin pancake

This rich pumpkin pie is very easy to prepare and is perfect for the Halloween season, prepare it and be surprised by its flavor.

  • 1 egg
  • 1/2 cups sugar
  • 1/2 cups vegetable oil
  • 1/2 cups granulated piloncillo
  • 1/2 cups pumpkin purée
  • 1/2 cups water
  • 1 1/3 cups flour
  • 1 tablespoon baking powder
  • 1/4 tablespoons cinnamon powder
  • 1/4 tablespoons clove powder
  • 1/8 teaspoons ground black pepper
  • 1 cup walnuts
  • 1 cup icing sugar
  • 1/4 oranges, the juice

  • In an electric mixer, beat the sugar, egg, oil, brown sugar, and pumpkin puree.
  • Add the water and continue beating.
  • In a deep bowl, mix the flour, baking powder and spices.
  • Using a spatula, pour the flour into the egg mixture and mix well.
  • Pour the mixture into a circular or muffin pan and bake at 150ºC for 20-25 minutes or until a toothpick inserted comes out clean. Remove from oven.
  • Allow cake to cool for 10-15 minutes and remove from pan.
  • For the glaze, gradually pour drops of orange into the icing sugar until it forms a perfect glaze.
  • Add the frosting on top of the muffin.
