It is a different way to eat pumpkin, besides being light for a dinner. Prepare this recipe and be amazed at how delicious pumpkin can be.

1/2 onions
3 eggs
3 tablespoons flour
4 tablespoons butter

The pumpkin is grated without reaching the center, preferably left to drain overnight.
In a frying pan, fry the finely chopped onion with the butter until it remains crystal clear.
Beat the eggs with the flour, add the drained pumpkin, the fried onion, the salt and mix everything.
In a 24 cm diameter non-stick pan over very low heat, add the mixture and cook for about 15 min. It turns and leaves another 15 min on the other side.
Allow to cool a little.
