Pumpkin pie

It is a different way to eat pumpkin, besides being light for a dinner. Prepare this recipe and be amazed at how delicious pumpkin can be.

  • 4 kilos pumpkin
  • 1/2 onions
  • 3 eggs
  • 3 tablespoons flour
  • 4 tablespoons butter

  • The pumpkin is grated without reaching the center, preferably left to drain overnight.
  • In a frying pan, fry the finely chopped onion with the butter until it remains crystal clear.
  • Beat the eggs with the flour, add the drained pumpkin, the fried onion, the salt and mix everything.
  • In a 24 cm diameter non-stick pan over very low heat, add the mixture and cook for about 15 min. It turns and leaves another 15 min on the other side.
  • Allow to cool a little.
