Pumpkin Roll with Cream Cheese Frosting

  • 6 egg whites
  • 1/4 cups Great Value® Sugar
  • 6 egg yolks
  • 1/4 cups Great Value® Sugar
  • 1 cup Great Value® wheat flour
  • 2 tablespoons pumpkin purée
  • 1 tablespoon cinnamon powder
  • 1 teaspoon nutmeg
  • 1/4 cups butter, melted
  • 570 grams Great Value® cream cheese, (190 g each)
  • 1 teaspoon vanilla essence
  • 1/4 cups Great Value® icing sugar
  • Great Value® icing sugar, for decoration

  • Preheat the oven to 180°C.
  • Beat the egg whites with the sugar until stiff peaks form. Set aside.
  • On the other hand, beat the yolks with the sugar until they double in volume and change color.
  • Gently fold the egg whites into the yolks. Gradually incorporate the flour, nutmeg, and cinnamon. Add the melted butter and puree, mixing gently until combined.
  • Pour the previous mixture into a baking tray lined with parchment paper, and spread with the help of a spatula. Bake for about 8 minutes or until cooked.
  • Remove from the oven and place on a sugar dusted cloth. Roll while still hot and set aside.
  • For the frosting, cream the cheese in the mixer, add the vanilla and powdered sugar. Beat until fully combined.
  • Unroll the pumpkin bread and spread the cream cheese frosting. Roll it up again and refrigerate for 20 minutes.
