Pumpkin Seed Marzipan

  • 2 cups pumpkin seeds, toasted
  • 1/3 cups water
  • 1 cup sugar
  • 1/4 teaspoons cream of tartar
  • 1 teaspoon vanilla essence
  • 1 egg white
  • 1/4 cups icing sugar

  • In a processor, add the pumpkin seeds and blend until a fine powder forms.
  • Heat the water over medium heat, add the sugar, and cook on low until a syrup forms.
  • Add the cream of tartar, the toasted pumpkin seed powder, the vanilla extract, mix, and incorporate the egg white. Cook on low for 5 minutes.
  • Place the mixture in a bowl and add the powdered sugar. Mix until a dough forms.
  • On a board with wax paper, place the mixture and flatten it with a rolling pin.
  • With a small ring, cut circles and refrigerate for 15 minutes. Remove the excess marzipan.
  • Serve and enjoy.
