2 cups pumpkin seeds, toasted
1/3 cups water
1 cup sugar
1/4 teaspoons cream of tartar
1 teaspoon vanilla essence
1 egg white
1/4 cups icing sugar

In a processor, add the pumpkin seeds and blend until a fine powder forms.
Heat the water over medium heat, add the sugar, and cook on low until a syrup forms.
Add the cream of tartar, the toasted pumpkin seed powder, the vanilla extract, mix, and incorporate the egg white. Cook on low for 5 minutes.
Place the mixture in a bowl and add the powdered sugar. Mix until a dough forms.
On a board with wax paper, place the mixture and flatten it with a rolling pin.
With a small ring, cut circles and refrigerate for 15 minutes. Remove the excess marzipan.
Serve and enjoy.
