Rainbow Gelatin Cups

  • 1/2 cups coconut milk, for the blue gelatin

  • 1/4 cups mixed berries gelatin, for the pink gelatin
  • 2 cups milk, hot, for the yellow gelatin
  • 1/4 cups vanilla gelatin, for the yellow gelatin
  • 1/2 cups Greek yogurt, for the green gelatin
  • 1/2 cups coconut milk, for the green gelatin
  • 1/4 cups honey, for the green gelatin
  • 3/4 cups milk, hot, for the green gelatin
  • green food coloring, for the green gelatin

  • For the turquoise blue gelatin, mix the natural yogurt with coconut milk, honey, and hot milk. Add the turquoise food coloring to obtain a pastel shade, pour in the hydrated gelatin and mix. Set aside.
  • For the red gelatin, dilute the red fruit gelatin in hot milk to obtain a pastel color. Set aside. Repeat the process for the yellow gelatin.
  • For the green and purple gelatin, repeat the first step and set aside.
  • Pour a little of the turquoise mixture into a gelatin cup to form a layer, refrigerate for 15 minutes or until set.
  • Once the layer is firm, pour the pink gelatin to form a second layer, refrigerate for 15 minutes or until set and repeat the process with the remaining colors: yellow, green, and purple.
  • Serve the cups decorated with whipped cream and colorful sugar pearls.
