  • 1/4 cups vanilla gelatin, for the yellow gelatin

  • 1/2 cups coconut milk, for the yellow gelatin
  • 1/4 cups honey, for the yellow gelatin
  • 3/4 cups milk, hot, for the green gelatin

  • For the turquoise gelatin: In a bowl, mix Greek yogurt, coconut milk, honey, and hot milk. Add turquoise food coloring to obtain a pastel color. Pour hydrated and melted unflavored gelatin into the bowl. Set aside.
  • For the red gelatin: In a bowl, dissolve mixed berries gelatin with hot milk to obtain a pastel color. Repeat steps for the yellow gelatin.
  • For the green and purple gelatins: Repeat the steps and set aside.
  • Pour a layer of turquoise gelatin mixture into small plastic cups. Refrigerate for 15 minutes or until set.
  • Pour a layer of pink gelatin on top. Refrigerate for 15 minutes or until set. Repeat with remaining colors: yellow, green, and purple.
  • Serve pastel rainbow gelatin cups topped with whipped cream and sprinkled with edible sugar pearls.
