Red Velvet Cupcakes with Chocolate Cookies

  • 4 San Juan® eggs
  • 2 1/2 cups flour
  • 1/2 cups cocoa powder
  • 1 teaspoon baking powder

  • 1 cup butter, at room temperature
  • 2 cups sugar
  • red food coloring
  • 1 1/4 cups flour
  • 1/2 cups cocoa powder
  • 1/4 cups cornstarch
  • 1 teaspoon salt
  • 90 grams butter, melted
  • 1 tablespoon vegetable oil
  • 1/2 cups sugar
  • 1 teaspoon vanilla essence
  • 1 San Juan® egg

  • Preheat the oven to 180°C.
  • In a bowl mix the dry ingredients: flour, cocoa, baking powder, and salt.
  • With the help of a mixer, cream the butter with the sugar, gradually add the San Juan® egg while continuing to beat. Incorporate the dry ingredients and the red dye, beat for 5 minutes until well combined. Place liners in the cupcake mold.
  • Pour the mixture into a cupcake mold until ¾ full, bake for 15 minutes, let cool and set aside.
  • For the cookies, in a bowl mix the dry ingredients: flour, cocoa powder, cornstarch, and salt. Set aside.
  • In another bowl, cream the butter with the oil, add the sugar, vanilla essence, and beat for 2 minutes.
  • Add the egg and mix, then add all the dry ingredients and mix until a dough forms, refrigerate for 20 minutes.
  • Roll out the dough and use a heart-shaped cutter to cut the cookies, placing them on a tray, bake for 10 minutes.
  • Place the cookie on the cupcake and sprinkle with powdered sugar.
  • Serve with a cup of coffee or tea.
