Red Velvet Cupcakes with Chocolate Cookies

  • 1/2 cups cocoa powder
  • 1/4 cups cornstarch
  • 1 teaspoon salt
  • 90 grams butter, melted
  • 1 tablespoon vegetable oil
  • 1/2 cups sugar
  • 1 teaspoon vanilla essence
  • 1 San Juan® egg

  • Preheat the oven to 180 ° C.
  • In a bowl mix the dry ingredients, the flour, the cocoa, the baking powder and the salt.
  • With the help of a blender , add the butter with the sugar, add the San Juan® egg little by little while continuing to beat. Incorporate the dry ingredients and the red coloring, whisk for 5 minutes until integrating. Coloca cupillos in the mold of cupcakes.
  • Pour the mixture into a mold for cupcakes up to ¾ of the layer, bake for 15 minutes, let cool and reserve.
  • For cookies, in a bowl mix dry ingredients, flour, cocoa powder, corn starch and salt. Reservation.
  • In another bowl, add the butter with the oil, add the sugar, the vanilla essence and whisk for 2 minutes.
  • Add the egg and integrate, immediately all the dry ingredients and mix until the dough is obtained, refrigerate for 20 minutes.
  • Stretch the dough and with the help of a heart-shaped cutter cut the cookies and place them on a tray, bake for 10 minutes.
  • Place the cookie in the cupcake and sprinkle with icing sugar.
  • Serve with a cup of coffee or tea.
