Red Velvet Cupcakes with Cream Cheese Frosting

These cupcakes, or panquecitos, are known in the United States as Red Velvet Cupcakes. They have a delicious cream cheese frosting.

  • 2 1/2 cups flour
  • 3 tablespoons cocoa
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder, baking powder
  • 1/2 teaspoons salt
  • 1 1/2 cups sugar
  • 6 tablespoons unsalted butter
  • 2 eggs
  • 1 1/4 cups cow's milk, with a few drops of lemon
  • 1 1/2 teaspoons white vinegar
  • 1 1/2 teaspoons vanilla essence
  • 2 tablespoons red food coloring
  • 5 tablespoons butter, for the cream cheese frosting
  • 4 teaspoons cow's milk, for the cream cheese frosting
  • 1 package cream cheese, for the frosting
  • 1 cup icing sugar, for the cream cheese frosting
  • 1 1/4 teaspoons vanilla essence, for the cream cheese frosting

  • Preheat the oven to 350F or 180 degrees Celsius.
  • Place 30 cupcake liners in a baking tray to prepare the cupcakes.
  • Mix the flour with cocoa, baking soda, baking powder, and salt in a medium bowl. Whisk together to combine the ingredients.
  • Place the sugar and butter (previously softened in the microwave) in a mixer and beat on medium speed for 3 minutes. Add the eggs, one at a time, mixing well after each addition. Add the flour mixture, vinegar, and 1 1/4 cups of milk (with the drops of lemon), alternating between the flour and milk, ending with the flour. Add the vanilla and red food coloring, mix well.
  • Pour the mixture into the cupcake liners and bake for 20 minutes until a toothpick comes out clean when inserted in the center. Let cool for 10 minutes on a wire rack.
  • To prepare the cream cheese frosting, mix in a mixer 5 tablespoons of softened butter (can be softened in the microwave), 4 tablespoons of milk (with the drops of lemon), and cream cheese. Beat on high speed until fluffy. Gradually add the powdered sugar and beat until the mixture is smooth. Add the vanilla and stir well.
  • Spread the frosting over the previously baked cupcakes and enjoy.
