1 cup rice
3 cups water
1 sprig cinnamon
1 teaspoon lime zest, (optional)
1 pinch salt
4 cups cow's milk
1 1/2 cups sugar
1/3 cups raisins
1 teaspoon vanilla essence
1 pinch cinnamon powder, for decoration

Place rice in a large pot with water, cinnamon stick, lemon zest, and salt.
Heat on high until it begins to boil, lower the heat and cover until almost all the water is absorbed.
Add milk and sugar, raise the heat and stir until it thickens.
Add vanilla and cook for 2 more minutes.
Remove from heat and let cool for 25 minutes.
Transfer to a serving dish or individual cups, add raisins and sprinkle with powdered cinnamon for garnish.
