Arroz con Leche (or Rice Pudding) is a typical Mexican dessert. It is served with raisins and a little cinnamon powder. It's super quick to prepare and everyone loves it.

Ingredients

6 portions
  • 1 cup rice
  • 3 cups Water
  • 1 branch cinnamon
  • 1 teaspoon lemon zest, (optional)
  • 1 pinch salt
  • 4 cups milk
  • 1 1/2 cups sugar
  • 1/3 cups raisin
  • 1 teaspoon liquid vanilla
  • 1 pinch cinnamon powder, to decorate

Preparation

Put rice in large saucepan with water, a stick of cinnamon, lemon zest and salt.
Heat at high heat until it begins to boil, lower the heat and cover until it almost absorbs all of the water.
Add the milk and sugar, raise the heat and stir until it thickens.
Add vanilla and cook for 2 more minutes.
Remove from the heat and let cool for 25 minutes.
Spoon into sundae glasses or individual cups, add raisins and sprinkle ground cinnamon to garnish.
