Rompope and Chocolate Cake

  • 1 1/2 cups butter, cut into cubes
  • 1/2 cups granulated sugar
  • 4 eggs
  • 1 tablespoon vanilla essence
  • 3/4 cups rompope
  • 4 tablespoons cow's milk
  • 3 cups flour, sifted
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 cup icing sugar, for rompope glaze
  • 1/8 cups rompope, for rompope glaze
  • 1 cup chocolate, melted

  • Preheat the oven to 180° C.
  • Cream the butter with the sugar in a mixer, add the eggs one by one, the vanilla extract, the rompope, the milk, then add the flour, baking powder, and salt until achieving a homogeneous mixture.
  • Pour the mixture into a greased and floured bundt pan, bake for 40 minutes.
  • Remove from the oven, cool, and place on a rack.
  • In a bowl, mix the ingredients for the rompope glaze, coat the cake with the glaze and let it dry.
  • Decorate with chocolate and let it dry, serve and enjoy.
