Roquefort Quiche with Pears

Delicious roquefort quiche with pears, this dish is one of my favorites, the flavor of the roquefort cheese gives it a special touch.

  • 1 1/2 cups flour
  • 1/2 sticks butter
  • 1 1/2 cups whipping cream
  • 3 eggs
  • 1/2 cups Manchego cheese, grated
  • 1/2 cups roquefort cheese
  • 2 pears, Anjou
  • 2 pinches salt
  • 1 pinch pepper

  • Mix the flour with a pinch of salt.
  • Incorporate the (cold) butter in cubes. Gently knead to form crumbs.
  • Add 5 tablespoons of cold water gradually, just kneading until a dough forms (it should be slightly damp, not too much).
  • Flatten the dough and line the individual molds with this dough, refrigerate for 15 minutes.
  • Remove from the refrigerator and bake for 10 minutes or until the crust looks slightly golden. Let cool.
  • Blend the cream, a pinch of salt, a pinch of pepper, eggs, and cheeses.
  • Add this mixture to the tarts.
  • Slice the pears thinly and place them on the tarts.
  • Bake at 180°C for 10 more minutes or until the filling looks solid and when tapping the molds, it no longer moves.
