Roquefort Quiche with Pears

Delicious roquefort quiche with pears, this dish is one of my favorites, the flavor of the roquefort cheese gives it a special touch.

1 1/2 cups flour
1/2 sticks butter
1 1/2 cups whipping cream
3 eggs
1/2 cups Manchego cheese, grated
1/2 cups roquefort cheese
2 pears, Anjou
2 pinches salt
1 pinch pepper
Preparation

Low
Mix the flour with a pinch of salt.
Incorporate the (cold) butter in cubes. Gently knead to form crumbs.
Add 5 tablespoons of cold water gradually, just kneading until a dough forms (it should be slightly damp, not too much).
Flatten the dough and line the individual molds with this dough, refrigerate for 15 minutes.
Remove from the refrigerator and bake for 10 minutes or until the crust looks slightly golden. Let cool.
Blend the cream, a pinch of salt, a pinch of pepper, eggs, and cheeses.
Add this mixture to the tarts.
Slice the pears thinly and place them on the tarts.
Bake at 180°C for 10 more minutes or until the filling looks solid and when tapping the molds, it no longer moves.
