Rosca de Reyes Cookies

  • Preheat the oven to 180 °C.
  • In a mixer with a whisk, mix the butter with the sugar until the butter is creamy, meaning it maintains a smooth and fluffy consistency. Add the whole egg, the yolk, and the lemon zest. Mix for 5 minutes at medium speed.
  • Gradually incorporate the flour and milk, mixing for 5 minutes until a homogeneous dough forms. Wrap the dough in plastic wrap and refrigerate for at least 40 minutes.
  • In a bowl, mix the butter, sugar, and flour, beating for 5 minutes or until you have a homogeneous dough that separates from the bowl. Set aside.
  • Sprinkle a little flour on the table, place the dough and form a roll of 1 cm in diameter, as shown in the video, cut pieces of 10 cm long and join to form mini rings, place a bit of the crust on the ring, place the cookies on a tray and set aside. Freeze the cookies for 10 minutes. Bake for 15 minutes at 180°C.
  • Take the small cookie rings out of refrigeration. Bake for 10 minutes at 180 °C.
  • Take the cookies out of the oven. Let them cool and brush with apricot jam, adding strips of ate for decoration. Serve with a glass of milk. Enjoy!
