100 grams sugar, powdered
225 grams sifted flour, and something extra to sprinkle
150 grams unsalted butter, softened and cubed
1 egg yolk
1 teaspoon vanilla essence

Preheat the oven to 350ºF (180ºC). Ready some anti-stick baking trays.
Put the sugar, flour and butter in a bowl, or in a food processor.
Rub with your fingers or process the ingredients until crumbles form.
Add the egg yolk and the vanilla extract, and mix until you get a dough.
Put the dough on a floured surface and knead until softened.
On a floured surface, stretch the dough to a thickness of 5 mm.
Use a spatula to turn the dough and prevent it from sticking.
If the dough is too sticky to stretch it, refrigerate it for 15 minutes and try again.
With the dough cutter, form round cookies and pass them to the baking trays.
Re-stretch the dough cuttings to a thickness of 5 mm. Cut all the dough.
Bake 10 to 15 minutes, in batches, until the cookies are golden brown on the edges.
Let the cookies cool until they are firm, then pass them to a rack.
