Simple Butter Cookies

Fine and elegant, these cookies are simple and you can not stop eating them.

  • 100 grams sugar, powdered
  • 225 grams sifted flour, and something extra to sprinkle
  • 150 grams unsalted butter, softened and cubed
  • 1 egg yolk
  • 1 teaspoon vanilla essence

  • Preheat the oven to 350ºF (180ºC). Ready some anti-stick baking trays.
  • Put the sugar, flour and butter in a bowl, or in a food processor.
  • Rub with your fingers or process the ingredients until crumbles form.
  • Add the egg yolk and the vanilla extract, and mix until you get a dough.
  • Put the dough on a floured surface and knead until softened.
  • On a floured surface, stretch the dough to a thickness of 5 mm.
  • Use a spatula to turn the dough and prevent it from sticking.
  • If the dough is too sticky to stretch it, refrigerate it for 15 minutes and try again.
  • With the dough cutter, form round cookies and pass them to the baking trays.
  • Re-stretch the dough cuttings to a thickness of 5 mm. Cut all the dough.
  • Bake 10 to 15 minutes, in batches, until the cookies are golden brown on the edges.
  • Let the cookies cool until they are firm, then pass them to a rack.
