Simple Butter Cookies

100 grams sugar , powdered
225 grams sifted flour, and some extra for sprinkling
150 grams unsalted butter , softened and cubed
1 egg yolk
1 teaspoon vanilla essence

Preheat the oven to 350°F (180°C). Prepare some non-stick baking trays.
Put the sugar, flour, and butter in a bowl, or in a food processor.
Rub with your fingers or process the ingredients until it forms crumbs.
Add the egg yolk and vanilla extract, and mix until a dough forms.
Put the dough on a floured surface and knead until smooth.
On a floured surface, roll out the dough to a thickness of 5 mm.
Use a spatula to turn the dough and prevent it from sticking.
If the dough is too sticky to roll out, refrigerate it for 15 minutes and try again.
With a cookie cutter, form round cookies and transfer them to the baking trays.
Re-roll the dough scraps to a thickness of 5 mm. Cut out all the dough.
Bake for 10 to 15 minutes, in batches, until the cookies are golden at the edges.
Let the cookies cool until firm, then transfer them to a rack.
