Simple Butter Cookies

Thin and elegant, these cookies are simple and you can't stop eating them.

  • 225 grams sifted flour, and some extra for sprinkling

  • Preheat the oven to 350°F (180°C). Prepare some non-stick baking trays.
  • Put the sugar, flour, and butter in a bowl, or in a food processor.
  • Rub with your fingers or process the ingredients until it forms crumbs.
  • Add the egg yolk and vanilla extract, and mix until a dough forms.
  • Put the dough on a floured surface and knead until smooth.
  • On a floured surface, roll out the dough to a thickness of 5 mm.
  • Use a spatula to turn the dough and prevent it from sticking.
  • If the dough is too sticky to roll out, refrigerate it for 15 minutes and try again.
  • With a cookie cutter, form round cookies and transfer them to the baking trays.
  • Re-roll the dough scraps to a thickness of 5 mm. Cut out all the dough.
  • Bake for 10 to 15 minutes, in batches, until the cookies are golden at the edges.
  • Let the cookies cool until firm, then transfer them to a rack.
