Soft Cookies

  • In a stand mixer with a paddle attachment or by hand, beat the butter, add the brown sugar and refined sugar until well integrated.
  • On the same mixture, add the egg one by one and allow it to integrate well; pour in the vanilla essence, flour, salt, and baking powder. Mix only until incorporated, without over-beating.
  • Add your preferred addition, such as chocolate chips or walnuts, and refrigerate the dough for 1 hour.
  • Form balls, you can use an ice cream scoop, or shape them with your hands.
  • On a baking sheet lined with parchment paper, place the balls, leaving a minimum space of 6 cm between each one. Do not apply pressure on them; they should be a portion of 1 ½ tablespoons of dough.
  • Bake the cookies at 180 °C for 10 minutes, until the edge of the cookie is golden. Remove from the oven and cool.
