We need a tray of cookies that do not have borders so cookies can cook quickly and retain their shape.
Heat the oven to 350ºF and put the oven rack in the middle. The butter has to be at room temperature.
In a medium bowl, mix flour, baking powder and salt. Using a blender mix butter and sugar.
It should be a light and fluffy paste, add the egg and vanilla, beating for 2 more minutes.
With the mixer at the lowest speed, add the dry ingredients, beat for 30 seconds until well blended.
Put the sugar to sprinkle on a plate. With a spoon go making pasta balls and putting them on the plate. Cover well with sugar.
Put the sugar-coated balls on the ungreased tray leaving 10 cm of space between them.
Bake until the cookies are golden and soft in the center. For 15 or 18 minutes. Allow to cool for one minute on the tray and transfer to a rack to cool.
