Sweet Corn Gorditas

  • 2 cups masa mix for tamales
  • 1/2 cups wheat flour
  • 2 teaspoons baking powder
  • 1/4 teaspoons baking soda
  • 1/4 teaspoons cinnamon powder
  • 3/4 cups sugar
  • 2 tablespoons vegetable shortening
  • 2 tablespoons unsalted butter
  • 4 eggs
  • 1 teaspoon vanilla essence
  • 3/4 cups water, warm

  • Sift the corn flour, wheat flour, baking soda, and baking powder into a bowl.
  • Add the cinnamon, sugar, and mix well.
  • Add the lard and butter and mix perfectly with your hands.
  • Add the egg yolks and vanilla and mix well.
  • Gradually add water until you obtain a consistent dough. Let it rest for 25-30 minutes.
  • Form small balls of dough with your hands and flatten them a bit.
  • Place them on a hot griddle at low temperature. They will start to puff up and smell great; at that moment, flip them over and wait for them to brown. Remove from heat and set aside.
