Sift the corn flour, wheat flour, baking soda, and baking powder into a bowl.
Add the cinnamon, sugar, and mix well.
Add the lard and butter and mix perfectly with your hands.
Add the egg yolks and vanilla and mix well.
Gradually add water until you obtain a consistent dough. Let it rest for 25-30 minutes.
