Cream Cheese and Red Fruit Crepes

A delicious dessert to enjoy with family; the cream cheese and red fruit crepes are finger-licking good. They are great for kids and adults alike.

  • 3/4 cups cow's milk , (crepe batter)
  • 2 eggs
  • 1 cup flour , (can be whole grain)
  • 1/2 cups sugar
  • 1 tablespoon unsalted butter , melted
  • 1/4 teaspoons salt
  • oil , as needed
  • 1 stick cream cheese, (for the filling)
  • 1 tablespoon vanilla essence
  • 1 teaspoon lime zest
  • 1/2 cups sugar
  • 1/2 cups blackberries, washed
  • 1/2 cups banana, sliced
  • 1/2 cups raspberries, washed
  • 1/2 cups strawberry , washed

  • Mix the first group of ingredients, except for the oil, until well combined and let it rest for 15 minutes.
  • Put oil or butter in a pan and pour a couple of tablespoons of the crepe batter, leave in the pan until the edges dry out and flip to cook the other side.
  • For the filling, mix the cream cheese with the vanilla and lemon zest until smooth. You can sauté the fruits in a hot pan and add sugar. Shape the crepe into cones, spread the cheese on them, and serve with the fruit.
