Frixuelos

A typical sweet of the carnival festival in Asturias, but one that we enjoy at any time of the year. I don't know anyone who doesn't like them. Alone or with filling, how do you prefer them?

  • 1 liter cow's milk
  • 8 eggs
  • 200 sugar
  • 350 flour
  • 1 baking powder
  • 1 tablespoon food coloring
  • 75 liqueur, anise

  • We add all the ingredients (except the oil, wine, and sugar for the topping) into a large bowl or saucepan and blend everything well with a mixer until we have a smooth (liquid) batter without lumps.
  • To start making the frixuelos, we need to have a non-stick pan and a saucepan with hot oil at all times, so we put it on the fire until it heats up well and then keep it on very low heat so it doesn’t cool down or get too hot. We will also need a container with white wine and another with sugar to give the final touch to the frixuelos.
  • In the pan where we are going to prepare the frixuelos, we pour a tablespoon of the hot oil we have in the saucepan, and immediately, with the help of a ladle, we pour the batter to make the frixuelo. When you see the edges are golden, it's time to flip them. Once we flip it, we let it cook for a few seconds, and it would be ready. We can check if the second side is ready by flipping it, which is now much easier than the first time.
  • When we pour the batter into the pan, we should ensure that it covers the entire base of the pan as evenly as possible, tilting and moving the pan until the batter is well distributed. We cook the frixuelos over medium heat so they don’t burn, as they cook quite quickly.
  • When we have the frixuelo ready, we place it on a plate, add a splash of white wine, and sprinkle sugar on top. We will do this with each of the frixuelos.
  • They would be ready to eat; I love them just like this, but we can also fill them with delicious things like rice pudding, custard, chocolate flan, cream, etc. For this occasion, I filled some with rice pudding, others with custard, and others with caramelized strawberries.
