This recipe is a sponge cake to make the Swiss roll or niño envuelto or for any celebration cake, and it can be soaked with the three milks sauce and its preparation is super simple.
We beat the egg pieces with the sugar until fluffy.
Then we incorporate the flour and baking powder, beat, and it’s ready.
We grease and flour 2 trays of 45 x 65 centimeters and pour the batter half and half. We bake in a preheated oven at 250 degrees for about 20 minutes.
We let the sponge cakes cool and unmold. A cake can be made the size of the tray, one sponge cake is placed, spread with whipped cream, filled with peaches, mangoes, or strawberries, covered with the other sponge cake, and soaked with three milks or sweet syrup on one side, then flipped and the same is done. Then the frosting is applied and decorated to taste. They can also be rolled to make a niño envuelto.
For the three milks syrup, I heat one liter of milk with some cinnamon sticks and sugar. I add 1 can of evaporated milk and another of condensed milk, and it's ready.
