Tamarind Popsicles

Tamarind popsicles are an ideal dessert for the heat and an excellent way to enjoy the summer season. These frozen treats are a fun way to consume different flavors and combine them as you like. The best part is that people of all ages can enjoy them!

  • 1 cup syrup, of tamarind, 250 ml, unsweetened
  • 3 cups water, 750 ml
  • 1 1/4 cups sugar
  • 2 tablespoons unflavored gelatin powder, 14 g, hydrated and melted
  • tamarind candies
  • piquín chile powder
  • chamoy

  • In a pot, add the water, tamarind syrup, and sugar, and mix cold with a spoon.
  • Heat over medium temperature and stir with the spoon until the water boils, then add the gelatin until it is incorporated and remove from heat.
  • Transfer the mixture to a container and cool to room temperature or using an ice bath.
  • In popsicle molds, place the tamarind candies in the center and add the tamarind mixture until it reaches the top. Freeze for about 2 hours.
  • Unmold the popsicles and enjoy them with chili piquín powder and chamoy.
