Tejocotes in Syrup

  • 1 kilo tejocote, clean
  • 5 grams white lime
  • 4 cups sugar
  • 2 sticks cinnamon
  • 10 cloves
  • 1 tablespoon orange zest

  • In a container with plenty of water, add lime and tejocotes and soak for an hour. Remove the tejocotes and place them in a pot with water and boil for 10 minutes. Remove and peel them, then return to the pot. Cook for 30 minutes over medium heat.
  • To make the syrup, mix 8 cups of water with sugar, cinnamon, cloves, and orange zest in a pot. Let it boil until it reduces by half.
  • In a blender, blend 3 tejocotes with the syrup.
