Ingredients: 1 kilo tejocote, clean; 5 grams white lime; 4 cups sugar; 2 sticks cinnamon; 10 cloves; 1 tablespoon orange zest

In a container with plenty of water, add the lime and the tejocotes, and soak for an hour. Remove the tejocotes and place them in a pot with water, boiling for 10 minutes. Take them out, remove the skin, and return to the pot. Cook for 30 minutes over medium heat. To make the syrup, in a pot, mix 8 cups of water with the sugar, cinnamon, cloves, and orange zest. Let it boil until it reduces by half.
