Creamy Mango Tart

This mango tart recipe will turn out extra special and delicious with its filling of cream and McCormick® mango jam, and its base is made of cookies and amaranth. This no-bake dessert is easy to make, as you only need to refrigerate it and for decoration, you will use flamed meringue, which will give it an incredible presentation.

  • 1 1/2 cups McCormick® jam, mango
  • 1 cup clotted cream
  • 3/4 cups whipping cream
  • 2 envelopes unflavored gelatin powder, hydrated and melted
  • 1 cup lime cookies, for the base
  • 1 cup amaranth, for the base
  • 1 cup butter, for the base
  • 5 egg whites, for the meringue
  • 3/4 cups sugar, for the meringue
  • mango, cut into cubes for decoration

  • Mix the cream with McCormick® mango jam in a processor until you have a smooth consistency. Set aside.
  • Whip the cream, add the previous mixture, continue whipping until it doubles in volume, and add the gelatin in a thin stream.
  • For the cookie base, crush the cookies and amaranth in a processor until you have a fine powder, add the butter until incorporated. Place in a tart pan, press to compact, and refrigerate.
  • Pour the filling into the cookie mold and refrigerate until set.
  • Whip the egg whites, gradually add the sugar until stiff peaks form.
  • Place the meringue on top of the tart and, using a kitchen torch, lightly brown until you reach the desired finish.
  • Cut a slice and serve with coffee.
