Easy Lime Charlotte with Cream Cheese

  • 1/3 cups lime juice, seedless, for the filling

  • For the filling: Blend the cream cheese with evaporated milk, sweetened condensed milk, lime juice, and lime zest to taste until fully combined. Set aside.
  • Cover a cake ring with cling film, leaving a base, then place acetate strips around the circumference and cover the base with vanilla cookies to completely line the surface. Add filling and place a layer of cookies around the ring, thus limiting the circumference. Then continue forming layers, adding a base of filling mixture, a base of cookies, and then a layer of filling mixture; repeat until you have 6 to 8 layers (remember that the last layer should be filling). Refrigerate the lime charlotte for at least 4 hours or until it is completely solid.
  • Unmold the lime charlotte, decorate with crushed vanilla cookies, and cover the surface with lime zest. Serve with your preferred beverage.
