Japanese Sweet Sandwich

  • 1 cup pancake mix
  • 1 teaspoon baking powder
  • 1/2 cups sugar
  • 1/2 cups evaporated milk
  • 2 San Juan® eggs, only the yolks
  • 1/2 cups San Juan® Egg Whites
  • 2 tablespoons butter
  • 1 cup whipped cream, whipped
  • 1 cup mixed berries

  • Mix the pancake flour, baking powder, sugar, evaporated milk, and San Juan® egg yolks in a bowl until you get a smooth mixture. Set aside.
  • In another bowl, using an electric whisk, beat the San Juan® Egg Whites for 5 minutes or until stiff peaks form.
  • Add half of the flour mixture to the egg whites and fold in gently, then add the other half of the flour mixture, mix, and set aside.
  • Melt the butter in a pan and pour in enough of the mixture for the Japanese sandwich. Cook for 5 minutes on each side over low heat. Repeat until you finish with the mixture for the Japanese sandwiches. Set aside.
  • To assemble the sweet sandwich: Place whipped cream on one of the breads, add berries, and top with the other bread.
  • Decorate the Japanese sweet sandwich with powdered sugar.
