Lemon Carlota Ring with Meringue

  • 5 cups cream cheese
  • 2 cups condensed milk
  • 3 tablespoons lime juice
  • 2 tablespoons lime zest
  • 3 packages María cookies, 190 g each
  • 5 egg whites, for the meringue
  • 1 1/2 cups granulated sugar, for the meringue
  • María cookies, mini, for decoration
  • lime, yellow and green, sliced, for decoration,

  • For the cream, beat the cream cheese with the condensed milk, lemon juice, and lemon zest until you get a smooth mixture without lumps.
  • In a ring mold lined with plastic wrap, arrange a layer of Maria cookies and cover with a bit of the cream. Repeat the process until the mold is full and you have several layers. Refrigerate for 1 hour.
  • For the meringue, beat the egg whites until they double in volume. Gradually add the sugar and beat until you achieve a firm meringue.
  • Unmold the ring and cover with the meringue, making peaks with it. Using a kitchen torch over medium heat, lightly caramelize the meringue, being careful not to burn it.
  • Decorate with Maria cookies and lemon slices. Enjoy.
